I have only done this once, but that was 10 years ago. Clear beer, but not carbonated to where I wanted it. I am thinking on giving it another go this winter. I was thinking on a level of 3 volumes for my level of carbonation. Using PET bottles. Thoughts?
p.s. I didn't add any yeast back then.

It works fine - gelatin leaves more than enough yeast behind to carbonate. Add the desired amount of sugar and bottle as normal.
