I want to make some wine and need my PET carboys for that. Since I am using my Robobrew this time of year, I was thinking on fermenting 23 L of a bitter in my 53 L SS Conical. Any issues with that?

Should be fine... the CO2 will create a blanket layer in the empty space.

Only bad thing is temp control might be harder than usual, coil may not be as submerged as usual.

Oh yea, I forgot about that. I can place the temp probe on the outside of the conical and read the temp strip.

Assuming you can put an airlock on the conical than you should be fine for even prolounged ageing.
