Substituting DME for LME

Post by cameronlaird » 7 years ago

I picked up the ingredients to brew a Sierra Nevada Clone. The recipe calls for 4lbs of LME and my home brew supply store only sold 3.3lb cans. Also in the recipe is DME, can I top up the LME with DME and if so, how much do I use to make up the 0.7lb shortfall.

Yes you can.
I use 80% DME to convert LME. Others may not agree but it works for me.
DME is more concentrated than LME.
When I made this clone, I didnt have any LME and converted the recipe for the extract portion to all DME.

It tasted damn good.

My understanding is that the general rule of thumb is:

1lb. DME dissolved in one gallon of water = 1.045 SG
1lb. LME dissolved in one gallon of water = 1.035 SG

So it's all going to depend on what OG you're shooting for.

A word of warning. The steam of the boil will clump the DME. So if you intend on pouring in a portion of a bag and keeping the remainder, measure out what you need first and then stir it in. I'm sure this is obvious, but just in case.
