Hi I am just wondering wich is the best method to control the temperature when fermenting

A spare fridge and a temp controller. That requires some extra money though. You can put your carboy in a big pan of water and throw a t-shirt over it. Get a fan and direct it to the carboy. T t-shirt will absorb the water and cool the carboy. Adding 2 L bottles of ice will help too. This and more is covered in this online book. www.howtobrew. This book in my opinion is a must buy.

I use a mini fridge and a temperature controller that I wired up to a relay. Works very well.
Mmmm... Beer... *drool*
