Homebrewing soda?

Any of you make sodas using yeast? I'm just starting and would like to find some good hints but I did not see a section about it on this forum.

I wouldn't have thought that yeast would be used. Otherwise it is not soda but a drink with alcohol. I may be wrong, though. I made pop a few times by carbonating Kool-aid and such for the kids.

There are some recipes out there (Papzians book has a couple). Essentially you let it ferment long enough to carb, then cool to stop the ferment. You have to drink it in a few day, but otherwise the process seems pretty straight forward. I think there's a number of rootbeer recipes out there that work like this

I've never done it myself, so I have no first-hand knowledge to pass on.

I'd be cautious with this - you don't want bottle bombs.

Thanks. I tried the rainbow root beer and it's ok but not great. Next I will try the Zatarains.
Ideally I would brew my own using roots but I don't know where to buy the roots...

The alcohol is very minimal since you stop it very early and put it to the fridge.

I did it a few times using soda 2L plastic bottles. You just press the collar to see how tight it gets and then put it in the fridge when it is hard enough.
