Forgot the 90 Min Boil

Post by Reignman »

I made a lager with 100% Weyermann Floor Malted Pils. I boiled only 60 min, I totally forgot about the 90 min boil. I am now done my D rest and am ramping down the temp. I sampled it and did not detect any DMS or any off flavour. Did I get lucky, or is it still necessary to do a 90 min boil with this malt?

Malting techniques and barely breeding has come a long ways. With only a few expeditions (e.g. some of the Bohemian floor-malted pils malts), the risk of DMS is very low compared to what it was a decade ago. It used to be that pilsner malts were a guaranteed DMS-bomb if not boiled for 90 min; I've 100% bo-boil and short-boil (15 min) all-pils sours recently without any DMS character.
